Vegetable Soup

Ingredients required:

1. Cabbage - 1/2 piece
2. French beans - 2 nos
3. Potato - 1 small no
4. Onion - 1 medium sized
5. Bay leaves - 2 nos
6. Black pepper corns - 3 to 4 nos
7. Fresh cream - 3 spoons
8. Water - 5 cups
9. Butter unsalted - 1/2 tsp
10.Cheese - 1 tsp
11.Salt to taste
12.Corn flour - 3 tsp (optional)
13.Mixed herbs (home-made)

Wash cabbage and beans and cut into small pieces.  Peel potato and cut into small pieces.  Slice onion.

In a pressure cooker cook on a low fire with a little butter and fry the onion till light brown in colour.  Add the vegetables and fry a little.  Add water, bay leaves, pepper corns, mixed herbs and cook for 10 minutes.

When cool, remove the bay leaves and mixed herbs.  Pour contents into a mixie jar and liquidize the cooked vegetables.  Add salt to taste.

Garnish with fresh cream, butter and grated cheese and serve.

A few drops of lime juice may be added if desired.  This improves the flavor.

This vegetable soup is a very healthy appetizer and serves four members in a family.
